I had just gotten fresh off the tree grapefruits from my aunt and uncle here in Tampa! So I thought I would find a healthy and quick recipe to use them. I found several salmon recipes and here is what I came up with!

Ingredients:
4 skinless salmon fillets, 5 to 6 oz. each
1/4 tsp. salt and pepper, for seasoning
2 grapefruits-1 should be juiced, other use the inside fruit, discard skin and pith
2 tsp. olive oil
1 tbsp chopped green onion
2 tsp. honey or sugar..I used a bit of sugar
2 tsp. red pepper flakes, adjust to taste
2 tsp. lemon juice-Fresh squeezed works best
2 minced cloves of garlic
Directions:
Heat oil and saute onions about 2 mins. Add juice of one of the grapefruits, lemon juice, honey, red pepper flakes, garlic and salt and pepper to taste. Let bubble up. Add salmon fillets. Cook about 5-6 mins per side. Should be flaky. Turn temp down and saute until the juices create a glaze. Serve salmon with glaze and fresh grapefruit wedges!
