I found this recipe on Sugar and Spice by Celeste. I followed the recipe pretty well..omitted a couple things and didnt put the tilapia in the oven, I simmered it all together and it was delicious! Very healthy and light and full of flavor!

Ingredients:
2 tbsp. extra virgin olive oil (EVOO)
6 Grouper fillets-I used tilapia fillets
Salt & Pepper, to taste
2 tbsp. butter
1 red onion, chopped
2 cloves garlic, minced
1 cup white wine
1 cup chicken broth
3 oz. tomato paste
1 package cherry tomatoes, halved
2 – 3 tbsp. fresh parsley, minced-OMITTED
About 15 stalks asparagus, chopped into 1 inch pieces-OMITTED
Directions:
Heat oil in pan. Once warm add onion and garlic. Cook about 3-4 mins or until fragrant. Add tilapia and brown on each side (sear them). Once browned, place fillets on plate and keep warm. Add rest of ingredients to pan and bring to a boil. Cook off a bit of the liquid (about 2 mins worth). Add fillets back to pan and simmer until most of the liquid has cooked off and there is a thick glaze and tomatoes are soft. Serve with potatoes or over vegetables!
