Here is a quick meal that is delicious, healthy, and low carb! A dinner for one is served!
Ingredients: (enough for one…add for as many people joining you for dinner!)
10 shrimp tails off
Green pepper chopped coarsely
Small yellow onion chopped
Any other stir fried veggies you enjoy
1/2 cup white wine
2 tbsp lemon juice
2 tbsp minced garlic
olive oil to coat pan
Coat pan lightly with evoo. Add garlic and saute until fragrant. Add shrimp and veggies and cover. Cook until veggies begin to soften. Add wine and lemon juice..I also add black pepper to taste. Saute until a light glaze forms in pan. Serve with low carb garlic bread!
