Shrimp Quesadillas

I had some leftover shrimp and veggies from a recent party. Rather than letting them go to waste or giving them away since we had so many leftover, I whipped up, Shrimp Quesadillas. They were great and SUPER easy!

ENJOY!

Ingredients: (enough for one) (THIS CAN BE MADE WITH NON-LEFTOVER INGREDIENTS, BUT I WANTED TO USE UP LEFTOVERS!!! 🙂 )

5 large leftover shrimp-Already cooked, tails off

Leftover chopped peppers and onions OR whatever quesadilla veggies you have on hand

lime juice from one lime

evoo enough to coat pan

Mexican spices mix (includes cumin, chili powder, onion powder, red pepper, etc..)

shredded cheese

tortilla shell soft

Directions:

Heat oil in pan. Once warm add shrimp and veggies, s and p, and Mexican Seasonings. Saute until veggies are soft and shrimp has nice coating. Add juice of one lime. Saute 4 more minutes. Remove from pan and assemble veggies, shrimp and cheese on tortilla. Fold in half and add back to warm pan. Cook each side until golden brown and crispy. Top with sour cream and salsa ( I used my sister’s homemade salsa. SOO GOOD)
