Lime Chicken Quesadilla

One of our favorite meals, but somehow we always forget to make them. I found this recipe from Made by Melissa and made a few changes to adjust to our liking and favorites. This is great with Spanish rice and margarita! Oh and guess who’s camera died right before getting a picture?? YUP mine…sorry no shot this time..

ENJOY!

  • 1/4 cup red wine vinegar-I omitted
  • 1 lime, juiced
  • 2 teaspoons white sugar-I used splenda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 green onions, chopped
  • 4 cloves garlic, minced
  • Zest from 1/2 the lime
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into large strips
  • tortilla shells-We used low carb ww wraps
  • shredded cheese- I use the “Mexican” blend-I used fresh shredded sharp cheddar
  • I also added some cayenne pepper and chili powder not in original recipe, enough to taste
  • I also added one chopped green pepper
  • Combine first 8 ingredients, spices and green peppers of our add-ins, in a shallow dish. Reserve 1/4 cup of the marinade. Add the chicken, cover and refrigerate for at least a couple hours.

    Heat a medium saute pan over medium heat. Add chicken and cook until juices run clear. Shred the chicken with 2 forks, add reserved 1/4 cup of marinade and 1/4 cup of water. Let simmer until all of the liquid is absorbed, set aside.

    Heat a large non-stick skillet over medium heat. Place 1 tortilla on the skillet, sprinkle cheese and chicken over tortilla and top with another tortilla. Heat until cheese is melted and bottom is golden brown, flip quesadilla and heat until other side is golden brown.

    Serve with salsa and sour cream, garnish with green onions and salsa.I also added spanish rice on the side for H!

      Ha! Great minds think alike because I plan on making quesadillas one of these days and I just bought some tortillas tonight!
