Rum and Pineapple Chicken

I wanted to find a great recipe to submit to Joelen’s Culinary Adventures Taste of the Tropics blogging event for August. I saw this recipe online and tweaked it to what we like! The original recipe bakes the chicken in the marinade, but we decided it would be great grilled too. I also omitted several ingredients as well as adding in our own. My recipe is featured below!

Dont forget to check out Joelen’s Culinary Adventures for all the Taste of the Tropics recipes!

ENJOY!

Ingredients:
4 boneless chicken breasts
1 oz Light Rum-I like Bacardi
1 oz lime juice
1 small can crushed pineapples in juice
s and p to taste
cayenne pepper just a dash or two

Directions:
Combine all ingredients and marinade 4 hours to overnight. Discard marinade and grill boneless breasts on a medium heat grill for about 10-15 mins per side. Serve with fresh grilled corn with lime herb butter (see blog for recipe!) and sliced fresh veggies!
