I have my first guest chef on my blog!!! My aunt’s husband, Russ, cooked us an amazing meal while we visited them during our stay in DC. I was able to help Russ out and get a first hand experience at his son Mike’s OUTSTANDING recipe! This can also be done with tuna as my Aunt Roberta prefers it. Leave the seasonings off the tuna and only glaze it with the glaze!
For the salmon rub:
1-3 lbs of salmon fillets or steaks depending on guest…this recipe shows for 3 lbs.
1/4 cup old Bay Seasoning
1/4 cup Lemon Pepper
1/2-3/4 cup soy sauce
1/2-3/4 cup brown sugar
1/2-3/4 heavy, green Tuscany olive oil
For the veggie:
Peppers of all colors thinly sliced
1-2 tbsp of taco seasoning
oil for pan to toss veggies
Bring soy sauce, brown sugar, and olive oil to a rolling boil. Set aside and allow to cool.
Combine Old Bay and Lemon Seasonings and heavily rub into salmon on both sides. Put onto broiler pan or baking pan. Brush on very generously the sauce mixture. Also if using tuna, brush onto it as well. Broil for 12-13 mins. Pull out and reglaze with leftover sauce. Broil for another 2-3 minutes.
While salmon is broiling, stir fry the peppers on a high flame. Stir in taco seasonings and some oil. Saute for just a couple minutes..the peppers should be hot, but not soggy, keep crisp.
Serve salmon/tuna and peppers over rice or pasta.
