I love anything cranberry especially during the fall with turkey or chicken. The tartness of the cranberry and the savory chicken or turkey make for such a great mix! I recently was reading Better Homes and Garden Magazine and found this Cranberry Chicken recipe. It was very easy to make and the sauce was light enough not to be overpowering with too much cranberry!! I did use chicken breast on the bone instead of thighs, so I needed to adjust the cooking time!!! This meal is also very low in cal, fat and carbs!
8 small chicken thighs skinless-I used bone in chicken breast to keep the fat down.
3/4 cup low calorie cranberry juice-I used diet Ocean Spray
3/4 cup fresh cranberries
2 sprigs fresh thyme
4 tsp brown sugar
Preheat oven to 375 and coat a large oven proof skillet with evoo. Heat over medium heat. Sprinkle chicken with salt and pepper. Place chicken meaty side down and cook 5 minutes (I did longer for the thicker breasts) until well browned on each side. Place skillet in oven and cook until juices run clear about 20 mins. (Breasts took longer)
Meanwhile, in a sauce pan add juice, berries, brown sugar, thyme, and a 1/4 tsp salt. Bring to a boil and then let simmer uncovered 15-20 mins or until it thickens. Discard sprigs and pour a good amt of sauce over chicken. Sprinkle with thyme leaves. Serve warm!
