A nice lighter meal after an eating marathon the past couple days! Very easy to make!
2 salmon fillets
1 tbsp lemon juice
EVOO for pan
salt and pepper to taste
1 tbsp minced fresh garlic
favorite salad and toppings
Heat oil in pan. Once warm add garlic and saute until fragrant. Add lemon juice and saute another minute or so. Add salmon and sprinkle with salt and pepper. Saute each side about 4-5 minutes or until flaky. Flake salmon and top favorite salad.
****I used fresh chopped romaine lettuce, grape tomatoes, cukes, and green peppers. I then topped it all with a light red wine vinaigrette!***
