Glazed chicken

This is the same recipe I used for glazed shrimp, but H thought it would be good on chicken too! And it was!!! This is to be grilled, but I sauteed it in a pan. Here is the recipe from with the grilling method!



3 cloves garlic, minced
1/3 cup olive oil
1/4 cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2-4 chicken boneless chicken breast cubed for skewers


  1. In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add chicken chunks to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
  2. Preheat grill for medium heat. Thread chicken onto skewers. Discard marinade.
  3. Lightly oil grill grate. Cook chicken on preheated grill for a few minutes per side, or until cooked through. Serve over rice!

    What a great recipe. I especially like how it uses standard pantry ingredients making it something I can whip up anytime!

    This looks so great. I don’t have a grill, so the pan method is best for me!
