One Pan chicken and potato bake

Found this recipe on Jen’s Food Blog, from Kraftfoods.com. A great easy recipe for a day when I didnt feel like cooking!! LOL!

I also used fat free dressing and boneless, skinless chicken breasts to keep it light and healthy for us among all the holiday treats we have been sampling!!

Could be made in the crockpot if you so desire!

**Sorry I totally forgot to take a picture as I was STARVING when dinner was ready!! LOL**

4 bone-in chicken pieces (1-1/2 lb.)
1-1/2 lb.  potatoes (about 3 med. potatoes), cut into thin wedges
1/4 cup KRAFT Zesty Italian Dressing (any works)
1/4 cup  KRAFT Grated Parmesan Cheese (any brand works)
1 tsp. Italian seasoning

Directions:

1. PREHEAT oven to 400°F. Place chicken and potatoes in 13×9-inch baking dish.

2. TOP with dressing; sprinkle with cheese and Italian seasoning. Cover with foil. I did add a bit of water in the bottom of the pan to keep the chicken from drying out too much!

3. BAKE 1 hour or until chicken is cooked through (180ºF), removing foil after 30 min. Sprinkle with chopped fresh parsley, if desired.

    This will be a nice change from our stovetop one pan chicken and potatoes. Plus Italian dressing spices anything up nicely.
