A great way to use up leftover chicken. After making a great roasted chicken yesterday, I knew I wanted something light and healthy to use some of the chicken in. I scoured the cupboards and threw together a great salad with a great balsamic vinaigrette from Emeril.
Mixed greens…enough for a generous serving for each person
1/2 cup dried cranberries
1/2 cup mandarins
1/2 cup blue cheese
1/2 cup walnuts
1 cup cooked and shredded chicken
This makes enough for two
Toss all ingredients into bowl and toss very well. Serve with a choice dressing or balsamic vinaigrette. I also served it with fresh from the oven honey yeast rolls.
