Poppy Seed Chicken

One of H favorites. It is a great comforting, easy meal. Great creamy chicken flavor with buttery crackers. EXCELLENT! Shared with me from his family.



4-5 chicken breasts (You can use boneless skinless chicken.)-Cooked and chopped.
1 can cream of chicken soup
1 carton sour cream (8 oz.) -I used low fat
1 1/2 packages Ritz crackers, crumbled- I used low fat
1 stick butter or margarine-Butter for us!-I used only a bit less than a half of a stick. We don’t like too much of the butter added in.  Your choice.
2 Tbsp. poppy seeds

Chop up cooked chicken breasts. Mix with soup and sour cream. Pour into 9×13 pan (I used 8×8 for just the two of us and cut back on the ingredients). Mix the crumbled crackers with the melted butter and poppy seeds. Spread on top of chicken mixture. Bake at 350 for 30 mins. Let rest 5 mins and serve. We like it over toasted bread or rolls. Can be served over rice, noodles or by itself.
**You can also add peas (about a 1/2-1 cup)  to the chicken mixture as well. I did and it gives it a great flavor.**
