I love a great, light salad to pair with a great meal. This salad was easy to throw together and was just right for our Roasted Salmon meal. This would pair well with any fish or light chicken recipe and would be good with shrimp or chicken tossed with it. I found this recipe in Everyday Food by Martha Stewart. Definitely give this salad a try!
In a small bowl, whisk together 2 tbsp white-wine vinegar, 3 tbsp evoo, and 1/2 tsp Dijon mustard. Season with s and p. In a large bowl, toss dressing with 2 heads Boston lettuce (I used green leaf as the Boston lettuce at my store was not looking soo good!), torn into bite-sized pieces and 2 cups fresh parsley leaves. Serve immediately.
