Mexican Pizza

Just in time for Cinco de Mayo!! Serve warm with chips and salsa, and of course an iced cold Corona!



2 tortillas per person
1-2 cans of re-fried beans depending on how many
shredded cheddar cheese
sour cream
1 lbs (or more depending on crowd) of gr turkey or beef-I used gr turkey
2 tbsp of favorite taco seasonings-I like the Latino Mix from The Spice House

Preheat oven to 350. Brown meat and season with taco seasonings. Once browned set aside. Take one tortilla and spread the re-fried beans on one side. Top with meat. Top with lots of cheese. Spread more beans on next tortilla and place beans side down on meat.  Spray top of tortilla with a bit of cooking oil. Bake in oven for about 20-30 mins or until cheese is melted and top of pizza is golden brown. Top with sour cream, salsa, and any other favorite taco toppings. Serve with rice, chips and salsa or just a very cold Corona!
