Caesar Salad Dressing

I love a Caesar salad with any Italian meal. For some reason the dressing and the romaine lettuce is a great side to a great Italian dish and this was perfect! I found this recipe on Food Network’s site and I like how deeply flavorful it was. This is much better than any bottled dressing and comes very close to authentic Italian recipes too!



6 cloves garlic, mashed and minced
1 tablespoon Dijon mustard
1 tablespoon Vinegar
2 tablespoons mayonnaise
1/2 cup olive oil
Lemon juice
Minced anchovy fillets (optional)-I omitted
romaine lettuce
favorite croutons
parm cheese shreds

Combine garlic, mustard, vinegar and two pinches of salt in a blender and mix thoroughly. Add mayonnaise and blend together to form a thick base. In a slow stream add olive oil through hole in lid. Scrape dressing with spatula into a bowl and season to taste with salt, pepper and lemon juice. If desired, add anchovy to dressing to create a deeper, saltier taste. Toss with chopped romaine lettuce, croutons and shredded parm cheese!
