Another hit from Cooking Light. I was able to use my new grill pan and this came together nicely and very quickly. It was healthy, easy, and delicious!
1/4 cup orange marmalade
2 tablespoons low-sodium soy sauce
2 garlic cloves, minced
1 (1 1/2-pound) salmon fillet
1/4 teaspoon salt
Preheat oven to 400°. (I used my grill pan and heated it before grilling the fish).
Combine first 3 ingredients, stirring with a whisk. Place salmon on rack of a broiler pan lined with foil; sprinkle fish evenly with salt. Spread marmalade mixture over fish. Bake at 400° for 18 minutes or until fish flakes easily when tested with a fork. (I grilled it fo 4-5 mins per side or until done).
