Fall salad with maple vinaigrettePosted: October 6, 2009
What a great fall salad from Martha Stewart. I love that this salad utilizes the great apples now coming into season. This was light and tasty and went with so many of our meals.
2 tbsp evoo
1 tbsp cider vinegar
2 tsp pure maple syrup
1.5 tsp dijon mustard
salt and pepper
endive halved and cored and sliced
4 celery stalks chopped
1 red apple sliced thinly
3 oz blue cheese crumbled
Whisk together evoo, cider vinegar, maple syrup and dijon mustard. Season with salt and pepper. Set aside.
In a large bowl combine 2 heads of endive with 1 bunch of watercress, celery, and apple slices. Toss with dressing and sprinkle on blue cheese crumbles.
