Healthy Chunky Beef Stew

This was a fantastic healthy meal that was very easy to put together. I made this earlier in the day and reheated it for dinner and it tasted fantastic. I always like soups and stews the day after or later in the day after cooking. Always seems to deepen the flavors. I did add some minced garlic and a bit of red winte to this as well. This recipe is from my Shape Magazine.



3/4 lbs boneless beef sirloin steak cut into 1 inch cubes
3/4 lbs tiny new potatoes halved
1 package (9oz) cut green beans
4 carrots peeled and cut into 1 inch pieces
1 onion cut into thin wedges
1 can (14 ozs) low sodium beef broth
1 tbsp Worcestershire sauce
1 and 1/2 tsp dried Italian seasonings
1/4 tsp black pepper
3 cans (8 oz each) no salt added tomato sauce

Over med heat lightly coat a 4 qt pot with cooking spray. Add beef (and I added a tsp minced garlic here) and cook 4-5 mins stirring frequently. Remove beef from pot using a slotted spoon and set aside.
Add potatoes, green beans, carrots, onion, broth, Worcestershire sauce, Italian seasonings, and pepper to the pot. Bring to a boil and reduce heat and simmer, covered, about 15 mins.
Add tomato sauce to pot and return to boil. Reduce heat and simmer covered for 10 mins. Add beef and heat thoroughly and serve.

240 cals, 20 g protein, 33 g carbs, 3 g fat, and 6 g fiber.
