Broiled Salmon with Marmalade-Dijon Glaze

I love Cooking Light. Here is another hit from them. From the lighter chocolate biscottis, to pan seared tilapia, I can always find my favorite meals without the guilt on Cooking Light’s site. This recipe was not only DEEELICIOUS but HOLY COW fast to make. The longest time was the broiling but even that part was QUICK. You can eat healthy even on a super busy night!

I served it with whole wheat brown rice (the 90 sec Uncle Ben’s micro bag rice..mmm and easy) and steamed broccoli!

Ingredients: This makes for 4, but I cut it in half for H and I.
1/2  cup  orange marmalade
1  tablespoon  Dijon mustard
1/2  teaspoon  garlic powder
1/2  teaspoon  salt
1/4  teaspoon  black pepper
1/8  teaspoon  ground ginger
4  (6-ounce) salmon fillets
Cooking spray

Directions:
Preheat broiler.
Combine first 6 ingredients in a small bowl, stirring well. Place fish on a jelly-roll pan coated with cooking spray. Brush half of marmalade mixture over fish; broil 6 minutes. Brush fish with remaining marmalade mixture; broil for 2 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
