Peach Pico de Gallo

A great topping for fish or chicken or with cinnamon chips! Found on clean eating online, this recipe does say to cook it, but I didnt and left it fresh and cool. Was perfect with our grilled salmon tonight. Here is my adapted recipe below.


1 c. peaches, diced
1 c. mango, diced
1/4 c. onion, diced
1/4 c. yellow pepper, diced
2 Tbsp. cilantro, minced
1/4 c. lemon juice
1/2 chipotle, minced-I omitted
Sea salt

Combine all ingredients and let sit in fridge for at least 30 mins to let all the flavors meld. Prepare meats or fish as you prefer. Serve pico over meats or fish and enjoy!
