Brown sugar cupcakes with cinnamon cream cheese frosting

Another month of birthday’s at H work. This time  I made the Guinness Chocolate cupcakes I made last March and these fabulous cookie tasting cupcakes from The Tyrant’s Kitchen blog.  These remind me of cookie dough and are wonderful with cream cheese cinnamon frosting.


1 1/2 sticks butter, softened
3/4 cup brown sugar
2 eggs
1 1/3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt (I omitted because I used salted butter.)
1/2 cup milk
1 teaspoon vanilla
1/4 teaspoon cinnamon

Preheat oven to 350 degrees. Prepare cupcake pan with liners
Whisk together flour, baking powder, baking soda, and cinnamon.
Measure out milk and vanilla together.
In another bowl, beat butter and brown sugar until light and fluffy.
Add eggs and beat well.
Add part of the flour mixture to butter mixture and beat to combine.
Alternately add milk and then flour mixture, ending with flour mixture.
Fill liners half to 3/4 full.
Bake for 15 – 18 minutes

Cinnamon Cream Cheese Frosting:
1/2 cup butter, softened
4 (3 ounce) packages cream cheese, softened
2 cups confectioners’ sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Cream butter and cream cheese. Add cinnamon and vanilla. Slowly add in confectioner’s sugar. Frost cooled cupcakes

    Made these tonight after tagging it in my Reader a while ago. They tasted great. I think that I would add a touch more cinnamon next time.
