Clean eating buffalo chicken with buttermilk-feta sauce

Mmmm love buffalo wings, especially when I can get them to be a bit healthier for us! Great new clean eating recipe from the latest Clean Eating Magazine. This was delicious and the dipping sauce was great tasting..not heavy but just enough to pair with the chicken!

ENJOY!

Ingredients:
1/2 cup nonfat plain Greek style yogurt
2 tbsp nonfat buttermilk
2 tbsp white wine vinegar
1/3 cup low fat feta cheese, crumbled
3 green onions chopped
1/4 tsp sea salt
4 tbsp hot sauce
1 tbsp evoo
1 tbsp paprika
4 boneless skinless chicken breasts
evoo cooking spray

Directions:
In a medium bowl, whisk together yogurt, buttermilk, vinegar, feta, onions, and salt. Cover and refrigerate until ready to serve up to 2 days.
In a small bowl, combine hot sauce, oil and paprika. Place chicken in a large shallow dish, and pour hot sauce mixture over chicken, tossing to coat. Cover and marinate for at least 30 mins up to 8 hours.
Preheat oven to 400 degrees. MIst a large baking sheet with evoo spray and remove chicken from hot sauce marinade, and place chicken on baking sheet. Discard marinade. Bake for 8-10 minutes  or until chicken is cooked through (no need to flip). Serve with dipping sauce and choice of sides (fries for H and salad for me!)

    I’m excited to try this one out. My husband and his friend planned a homemade wing night for next week. I will totally make these for the girls in the group.

    Last time the guys did wing night, I was so grossed out by the Fry Daddy that I haven’t had a wing since then.

    Just when I thought I’d have to give up buffalo chicken!! I might have to try it two ways, one with the evoo and one with Earth Balance…I smell a head to head battle coming!!

  4. This rocks on wraps with sliced cucumbers, shredded carrots and baby spinach, too. Love, love, love this recipe!
