Grilled Tomato, mozzarella, basil panini

Here is our version of a somewhat clean eating grilled tomato and mozzarella Panini!

ENJOY!

Ingredients:
1-2 tomatoes sliced
2-3 slices fresh mozzarella per Panini
chopped fresh basil for each Panini enough to your liking
Evoo and balsamic vinegar for drizzling
Favorite baguette or thick sliced bread-We used Ezekiel Sprouted Wheat Sliced Bread
s and p to suit your tastes

Directions:
Heat grill to medium heat and oil grates. While grill is heating assemble sandwiches. On one slice of bread drizzle evoo and vinegar then top with cheese, tomatoes and sprinkle on basil. As needed add more evoo or vinegar as you like and then season with salt and pepper. Top with second slice of bread. Oiled grates should be enough to coat the bread slices and grill well, but you may like a bit of evoo on the outside of each slice. We chose not to  and it still grilled up nicely.
Grill sandwiches for about 3-4 mins per side or until grilled to your liking and cheese is melted.
Serve immediately!
