What a great clean eating recipe to get back into the kitchen with. This was not only easy and quick to make, but made for great leftovers. I made this on a very busy night and we ended up with a ton of leftovers, so the next day when we were out of a lot of food in the house, this reheated very well, even in H lunch at work. This Clean Eating Mag recipe would be great for a quick lunch, dinner, dinner party or brunch meal!
4 4-oz boneless skinless chicken breasts pounded thin
2 tbsp fresh parsley, chopped
2 tbsp fresh basil, chopped
1 clove garlic, chopped
Sea salt and fresh ground black pepper
1oz light Swiss cheese, shredded
Citrus Rice Salad
2 cups cooked brown rice, cooled to room temperature
1 recipe orange herb dressing
½ cup fresh oranges slices, halved and membranes removed
¼ cup fresh parsley, chopped
1 small red bell pepper, diced
½ oz toasted unsalted pecans, chopped
Orange Herb Dressing
2 tbsp fresh orange juice
2 tbsp white balsamic vinegar or apple cider vinegar
2 tbsp evoo
1 tbsp fresh tarragon, minced, or ½ tsp dried
½ tbsp fresh oregano, minced, or ¼ tsp dried
½ tsp orange zest
Sea salt and fresh ground pepper to taste.
Place approximately 2 inches of water into large pot over med-high heat cover and bring to a boil.
Meanwhile, prepare chicken pinwheels: place each chicken breast on and individual piece of foil (large enough to wrap breast when rolled up). In a small bowl combine parsley, basil, garlic, salt and pepper. Evenly sprinkle over each flattened breast, and divide cheese amongst each breast. Roll up each breast starting at the narrow end, then wrap securely in foil.
Transfer chicken packets to a steamer or colander placed over the pot of boiling water. Cover tightly and steam until cooked through. About 12 minutes.
Meanwhile, prepare citrus rice salad. Place rice into large mixing bowl and toss with orange herb dressing, orange slices, parsley, and red pepper…add nuts when serving.
