Steak and goat cheese quesadillaPosted: September 14, 2010
Mmmmmm nothing better than a delicious Mexican meal, except maybe a delicious EASY twist on a Mexican meal that isnt too bad on your waist line either. Well this is the recipe. Adapted from this recipe, I was able to whip up each step and then put together when we were hungry. Easy, delicious and somewhat clean eating.
Enough for 2.
1-2 lean sirloin steaks cut into small, thin strips
1 pepper sliced
1 small onion sliced
Salt and gr. pepper
2 ears of corn, corn removed
1 large tomato chopped
1/2 cup goat cheese crumbled
Heat oil in pan and add steak and cook until done. Add in peppers and onions. Season with salt and pepper and enough garlic powder to your liking. Cook until veggies are soft. Set aside.
In another pan, heat oil and add corn, tomatoes, cilantro, and salt and pepper. Cook until warm.
Heat grill pan. Add in one tortilla, top with steak mixture and goat cheese. Cook until tortilla is browning to your liking. Add 2nd tortilla on top and flip. Cook second side until desired doneness.
Plate and top with corn salsa. Serve immediately.
