Pumpkin and maple granola

This was incredibly easy to make and was great over yogurt! I even added a bit to my oatmeal and cereal. I love this mixture. I found the recipe here, but below are my changes.

Ingredients:
2 cups oats
1/2 cup walnuts
1/4 golden flax seeds whole
1/4 cups light brown sugar
1/4 cup honey
1/2 cup pumpkin
1-2 tsp pumpkin pie spice
1-2 tbsp pure maple syrup
Directions:
Preheat over to 275.
Mix all ingredients together.
Bake for one hour, stirring every 20 mins.
Cool a bit on rack while drizzling with just a bit of pure maple syrup and stir well. Bake another 10 mins. Finish cooling.
Yum! This would be wonderful over yogurt. I have a few cans of pumpkin in my pantry and I think this recipe will have to be made. 🙂
