Shrimp in a tomato vodka sauce
Posted: September 9, 2010 Filed under: Fish/seafood, Light and healthy, Pasta 1 CommentAhhh feels SO GOOD to be back in the kitchen. In an effort to get back to cooking and clean eating and keeping myself busy, I wanted to find all kinds of new recipes to try. I stumbled upon this one and it was great. I did change it up to what I had on hand and our likes. My recipe is below, click the link above for the original.
ENJOY!
Ingredients:
1 teaspoon olive oil
1 small onion, minced
1 garlic clove, minced
½ cup vodka
2-3 tomatoes sliced and diced
1/8 to ¼ teaspoon red pepper flakes
¾ cup fat free -1% milk
1½ teaspoons cornstarch
Sea salt and ground fresh pepper to taste
1/2-1 pound large shrimp, peeled and deveined
4 oz angel hair ww pasta
Directions:
Cook pasta according to directions on pkg.
While pasta is cooking, heat oil in skillet and warm. Once warm add garlic and onion. Cook 2-3 mins. Add tomatoes and cook 3-4 mins. Add shrimp and cook until cook thru but not over cooked this will make them too chewy and hard. Add red pepper flakes and cook 30 secs. Add milk, vodka, and corn starch. Mix well and cook until liquid thickens. Add salt and pepper to taste. Once thickened add in cooked pasta and toss well to combine. Serve immediately.
Glad you liked it! Georgie did great on that recipe 🙂
