Chocolate chip banana bread

Each week I like to make a homemade dessert of some sort to put in H’s lunch. We have had a ton of bananas lately, so this week it is chocolate chip banana bread!!! This recipe is from his mom, which he grew up liking, it is quick, but I added the chocolate chips and walnuts!!!

Chocolate chip, walnut banana bread:

1 c sugar

1/2 c shortening or oil

2 eggs

2 c flour

3 medium bananas mashed

1/2 tsp. salt

1 1/2 tsp. baking soda

1/2 to 1 c chopped walnuts

1 c chocolate chips

Directions:

Cream sugar and shortening or oil. Beat in eggs. Add bananas and beat until well mixed. Blend in vanilla. Add all dry ingredients and blend until well mixed. Fold in nuts and chocolate chips.

Bake in a loaf pan lightly greased. Bake at 350 degrees for an hour or until middle is cooked. Check with tooth pick.

Let sit 1 minute on cooling rack before taking out of pan. After the bread is out of the pan let cool on rack until completely cooled. Slice and enjoy!!

I slice and individually wrap it for the entire weeks lunches!!! Can be frozen as well!!
